We have a favorite granola recipe that is perfect with homemade yogurt.
It's simple and fun to make. It can be stored in ziplock bags or other airtight container. We usually gobble it all up within a day or two, but it will stay fresh for over a week.
It is healthy and cheaper to make your own granola. And once you get the basic recipe down you can modify it to include different combinations of healthy nuts, seeds and dried fruits.
You can even adjust it to make granola bars and cookies.
Directions:
Preheat the oven to 300 degrees F. Spread the oats, coconut, almonds and seeds on a 9 x 12 inch baking sheet.
Bake the dry ingredients for about 15 minutes until crispy and golden brown. While the dry ingredients are baking, heat butter, sugar and honey in a small saucepan until sugar is melted.
After removing oat mixture from the oven pour the butter mixture over it and mix it all up. Add the raisens or other dried fruit and let it cool. Enjoy with vanilla or plain homemade yogurt.
Many people have a difficult time digesting unsoaked granola. It can leave you feeling kinda heavy and sluggish. The best way to avoid this is to soak the oats for in an acidic solution like whey.
Using the recipe above, you would combine the oats, flaxseed meal, and salt in a big bowl. Mix in about 1/2 cup of whey and let it sit covered for about 8 hours.
Directions:
Mix the oats, flour, sea salt, sugar and cinnamon together. Combine the peanut butter, vanilla, melted butter and syrup, stirring well.
Add into the dry ingredients and mix well. Add in the dried fruit, nuts and seeds. Spread mixture evenly into a 9 X 12 inch glass cassorle dish lined with waxed paper, patting down with a buttered spoon or spatula.
Let set and cool. The mixture will harden as it cools and then it can be cut into bars.
Directions:
Preheat the oven to 350 degrees F.
Mix the yogurt, butter and egg together. Add the remaining ingredients and mix well. Form dough into balls and bake for 12-15 minutes or until edges or golden.
